I had several questions after last weeks Meal Plan about the Conecuh Alfredo. What is conecuh? Is that just normal chicken alfredo with a weird name? How do you do it? Well, here is my 'recipe'. I use that term loosely. The first thing I will tell anybody who wants to cook is to make things your own. If you don't like a cheese I use, choose your own. If you don't like the pasta, pick another one. Add spices you like. Cooking should be fun and I am always experimenting. I also hate blogs that you have to scroll forever for recipes, so I will try not to have too much of that. Just the recipe with whatever recommendations I can make to help make it easier. Enjoy!
This is Conecuh Sausage. It is made in Conecuh County, Alabama. It is a touch spicy, a bit smokey, and a whole lot of yummy. It is good with so many things, but today we are going to add it to cheesy pasta.
-Boil pasta. Whatever kind you want. I have used elbow noodles, spiral noodles, and this night, I used penne pasta.
-Cut the Conecuh up into bite size pieces and brown it in a pan. When they start getting some good color to them, take them out and put them in a bowl and hold them until later.
-Add a softened block of cream cheese to the pan so that it melts into the small amount of conecuh grease. *I believe cream cheese makes everything better. Everything.
-Add a jar of alfredo sauce to the cream cheese and a cup of heavy whipping cream(I was out and subbed whole milk. It worked fine. Be flexible.) Cook on medium heat until cream cheese and sauce come together.
-Add in a teaspoon of garlic powder and a teaspoon of onion powder. This might be too much for you. Add to your liking. I add onion powder to almost everything and you cannot eat pasta without garlic. Adding cajun seasoning is good in this too.
-Add sausage back into the sauce. If it seems to be a little thick, add some more heavy whipping cream or milk. A little at a time until you get a good consistency.
-Mix in the cooked pasta. And pour into a lightly greased 9x13 pan.
-Top with parmesean(I used mozerella this night because it was what I had.)
-Bake at 375 until the cheese on top is melted.
This is such an easy meal and adults and kids like it. Leftovers reheat well. Add a touch of milk and microwave. It keeps it from getting dry. I hope ya'll enjoy this one!
